The bile is necessary for proper functioning of the digestive system in our body. When you take high fatty foods the gall bladder releases more bile to the digestive system so that the high fatty foods are disintegrated to be absorbed into the body.

Digestion of high fatty foods requires more bile to be released for digestion. If the gall bladder is removed the discharge of the bile is constant and hence it is not easy to digest the high fatty foods that are taken.
